Wash and cut your strawberries.
Place the strawberries in bowl and add sugar, corn starch and lemon juice. Mix together.
Take your first flaky pie crust out of the fridge and roll it down.
Put your strawberry filling on the crust.
Take the second pie crust out of the fridge and roll it down.
Cover the strawberry filling with the second pie crust, making sure you leave some holes so the steam can escape.
Mix an egg with a tbsp of water and brush this mixture to the crust.
Sprinkle sugar on it.
Bake for for 35 to 45 minutes at 375F, until the crust is golden.
