Sponge Cake

Ingredients
  

  • 4 Eggs
  • 120 g Sugar
  • 120 g Flour

Instructions
 

  • Preheat the oven at 350F (180C).
  • In the large bowl of a stand mixer, add the eggs and sugar and beat on high speed for a few minutes. Until the mixture becomes a really pale yellow and doubles in volume!
  • Once it done, add the sifted flour all at once and gently fold in. Slowly, so you wont break all the bubbles.
  • You can now poor the batter in a cake pan or on a baking sheet. If you are using a silicon mold you don't need to add anything but if you are not, then you'll need to brush on some melted butter and dust flour on it, that way your sponge cake wont stick!
  • Bake for 20 minutes, if you are making a cake and 10 minutes if your are baking a sheet.
  • It's done when a tooth pick come out clean and the edges are golden and the top a little sticky.
