Quatre-Quart

Ingredients
  

  • Eggs, weighted with the shells (3 or 4)
  • Sugar, the same weight as the eggs
  • Flour, the same weight
  • Butter, melted, the same weight
  • Options: chocolate chips, vanilla, lemon zest, candied fruits, rhum...

Instructions
 

  • Preheat the oven at 350F (180C).
  • Use a silicone pound cake mold or a regular mold, buttered and lightly floured, you can put a little piece of parchment paper at the bottom.
  • Weight the eggs, WITH the sells.
  • In the bowl of a stand mixer, mix the eggs with the sugar at maximum speed, until it doubles in volume and becomes a pale yellow, about 3-4 minutes.
  • Stir in the flour.
  • Stir in the melted butter.
  • If you choose one of the options, now it's time to stir it in!
  • Poor in to your mold.Using a wooden spoon, trace a line on top of your batter.
  • Bake for around 50 minutes, until a tooth pick come out clean.
