Meyer Lemon Cookies

Ingredients
  

Cookies

  • 250 g (1 cup + 2 tbsp) Butter, soft
  • 125 g (1 cup) Icing Sugar
  • 3 Egg yolks
  • 440 g (3 1/2 cup) Flour
  • 50 g (1/3 cup) Corn Starch
  • 1 tbsp Baking Powder
  • Zest of 1 lemon

Honey Meyer Lemon Curd

  • 2 Eggs
  • 2 Egg Yolks
  • 215 g (2/3 cup) Honey
  • 3 Meyer Lemon
  • 90 g Butter

Instructions
 

Cookies

  • In the bowl of the robot, add butter and sugar until it make a paste.
  • Add the yolks one at the time.
  • In a bowl, mix together, flour, corn starch and baking powder.
  • Mix the flour mixture into the butter mixture.
  • Make a ball and refrigerate for half an hour.
  • Roll into half a cm thick and cut with a cookie cutter.
  • Bake for 10-12 minutes at 350F (180C).
  • Let cool down completely.

Meyer Lemon Curd

  • In a pan, add eggs, egg yolks, honey and lemon juice.
  • On medium high heat, stir in the cubes of butter one at the time.
  • Stir constantly until all the butter is melted.
  • Allow to start boiling then pass through a chinois to remove any cooked eggs.
  • Allow to cool down.

Make the cookies

  • Sprinkle icing sugar on the top cookies.
  • Add a spoon of lemon curd onto the bottom cookies.
  • Place the top cookies on top and add a little bit of lemon curd in the holes to make it pretty!
