Preheat the oven at 350F (180C).
Butter and flour a baking sheet.
In the bowl of a stand mixer, add sugar and eggs and mix until light and fluffy, about 3-5 minutes.
Sift the flour and a it all at once to the egg and sugar mixture.
Gently incorporate the flour until combined.
Pour the mixture into the sheet and bake for 10 minutes.
allow to cool down. Cut the edges and fill up with whatever you want.
Roll it down and refrigerate.
It tastes better the next day or at least after a few hours in the fridge!
