This recipe is for 2 pie crusts, if you are doing a galette or a single crust pie, divide in half. Or do it like that and freeze half for later!
In a large bowl, add the flour, a pinch of salt and the cold cubes of butter.
Mix the flour and butter together with your fingers until combined, with a few little pieces of butter left.
Add the cold water and mix again until the dough holds together. You might have to add a little bit more for the dough to hold.
Make a bowl and refrigerate for half an hour or longer.
