First, you need to make the flaky pie crust. Find my recipe for homemade flaky pie crust on the blog.
While your crust rest in the fridge, start your cherry filling.
Wash and pit your cherries.
Place the pitted cherries in bowl and add sugar, corn starch and lemon juice.
Take your pie crust out of the fridge and roll it down. This doesn't have to be perfectly round because galettes have a rustic look, so son't worry about it!
Put your cherry filling on the crust and fold back the edges to cover some of the cherries.
Mix an egg with a tbsp of water and brush this mixture to the crust.
Sprinkle sugar on it.
Bake for for 30 minutes at 375F, until the crust is golden.
And voila!
