Mix the instant yeast with warm water in a small bowl. Set aside.
In a large bowl or a clean surface, make a hole in your flour.
Pour the yeast in the middle of the flour. Add the olive oil and water. Using your hands, or your kids hands, bring the flour toward the centre until everything is mixed together.
Knead the dough for a few minutes until it doesn't stick to the bowl or your hands.
Cover the ball of dough with a clean tea towel and set aside for 1 hour, until it doubles in volume.
Using olive oil, grease the your cast iron skillet.
Flatten the pizza dough inside the skillet and set aside to rise for 20 minutes.
After the 20 minutes, scoop a couple of spoons of tomato sauce on the dough and spread around.
Add grated cheese on top and any other toppings.
Once the fire is out, place a few rocks or a grill grate over the hot coals.
Put the cast iron skillet over the rocks and cover with a dutch oven lid.
Place a few hot rocks or hot coals on the lid and let it cook for about 20 minutes.
