Blueberry Lemon Muffins

Ingredients
  

  • 3 cups Flour (435g)
  • 3 tbsp Baking Powder
  • 2 Eggs
  • 1 cup Sugar (230g)
  • 1 cup Milk (225mL)
  • 1/2 cup Vegetable Oil (100g)
  • 1 Lemon
  • 2 cups Fresh Blueberries
  • 1/2 cup Icing Sugar
  • 2 tbsp Lemon Juice

Instructions
 

  • Preheat the over at 350F (180C)
  • In a large bowl, mix the flour and baking powder together.
  • In an other bowl or the bowl of your stand mixer, mix the eggs and sugar until light and fluffy.
  • Add the milk and oil, then mix.
  • Pour the flour mixture into the wet mixture and mix.
  • Add the lemon zest and the lemon juice and mix.
  • Add the floured blueberries and fold in gently.
  • Scoop the batter into muffin muffin tins and bake for 20 to 25 minutes depending on the size of the muffins.
  • Let the blueberry lemon muffins cool down.
  • In a little bowl, mix icing sugar and lemon juice. Pour on top of the muffins.
