Nothing says summer like a Strawberry Cake! My version of this summer cake is made of sponge cake layers filled with strawberry coulis, whipped cream and fresh strawberries! This cake is so fresh and light it will please adults and kids alike! This the perfect ending to any summer barbecue!

Ingredients you’ll need

Like I said above, this cake is made of:

  • Sponge Cake (full recipe here)
  • Strawberry Coulis
  • Whipped Cream (full recipe here)
  • Strawberries

In more detail, here is all the ingredients you’ll need to make this delicious summer cake:

  • Sponge Cake
    • Eggs
    • Flour
    • Sugar
  • Whipped Cream
    • Whipping Cream
    • Sugar
  • Strawberry Coulis
    • Strawberries
    • Sugar
  • Strawberries

All the steps to make this Strawberry Cake

There are a few steps to make this delicious summer cake, and here there are:

  • Sponge Cake
    • Beat the sugar and eggs until light and fluffy.
    • Add the sifted flour and fold in gently.
    • Poor the batter in a a round cake mold.
    • Bake for 20 minutes.
    • Allow to cool down.

  • Whipped Cream
    • Beat the cream and sugar until it forms soft peaks.
    • Keep in the fridge until ready to use.

  • Strawberry Coulis
    • In a small saucepan, cook the strawberries with sugar until it boils.
    • Blend together until smooth.
    • Allow to cool down.

Make the perfect Strawberry Cake

  • On a decorating turntable (or on a pretty plate), place one layer of sponge cake, then add a quarter of the whipped cream, then strawberry coulis and add pieces of fresh strawberries.
  • Cover with another layer of sponge cake and repeat. Keep a few spoons of strawberry coulis.
  • Cover the cake with a thin layer of whipped cream a refrigerate for 1h.

  • Take your cake out of the fridge and cover with the rest of the whipped cream. You can mix the strawberry coulis with the whipped cream if you want a pink cake. The more coulis the darker the pink. Or you could add little drops of strawberry coulis on the cream to make pink spots on the white cake.
  • Decorate with fresh strawberries on top and voila! The perfect summer cake: the strawberry cake!

  • 6 Eggs
  • 180 g Sugar
  • 180 g Flour

Whipped Cream

  • 750 ml Whipping cream
  • 150 g Sugar

  • 2 cup Fresh Strawberries

  • Take your cake out of the fridge and cover with the rest of the whipped cream.
  • Decorate with fresh strawberries on top and voila!
