Sponge cake is this easiest cake there is! Its recipe only calls for 3 ingredients and it only takes minutes to make! Genoise, as us French call it, is the base for many cakes! From the simplest cakes to the fanciest desserts! This cake is so versatile you must know how to make it!
The traditional way to make Genoise will tell you to cook the eggs and sugar over a bain marie, then beat the warm mixture then add the flour… But who has time for that? Not me! Anf probably not you!
Here is my version of it and I promise you won’t be able to tell the difference!
Ingredients you’ll need
This is a very simple cake! So you’ll only need 3 ingredients for it:
- Eggs
- Sugar
- Flour
You can make that recipe as big as you want or as small as you want! All you have to remember is that for every egg you will need 30g of sugar and 30g of flour! Whether you need one egg or 8 the recipe the recipe is super easy to adapt.
How to make a perfect Sponge Cake
In the large bowl of a stand mixer, add the eggs and sugar and beat on high speed for a few minutes. Until the mixture becomes a really pale yellow and doubles in volume. You can not over beat it so if you are not sure keep beating!
Once it done, add the sifted flour all at once and gently fold in. Slowly, so you wont break all the bubbles.
That’s it!
You can now poor the batter in a cake pan or on a baking sheet. If you are using a silicon mold you don’t need to add anything but if you are not, then you’ll need to brush on some melted butter and dust flour on it, that way your sponge cake wont stick!
What to do with a Sponge Cake
Well, you can do pretty much anything you want! But here are a few recipes you can try!

- Some nice summer cakes (like a blueberry lemon cake or a strawberry cake)

Sponge Cake
Ingredients
- 4 Eggs
- 120 g Sugar
- 120 g Flour
Instructions
- Preheat the oven at 350F (180C).
- In the large bowl of a stand mixer, add the eggs and sugar and beat on high speed for a few minutes. Until the mixture becomes a really pale yellow and doubles in volume!
- Once it done, add the sifted flour all at once and gently fold in. Slowly, so you wont break all the bubbles.
- You can now poor the batter in a cake pan or on a baking sheet. If you are using a silicon mold you don't need to add anything but if you are not, then you'll need to brush on some melted butter and dust flour on it, that way your sponge cake wont stick!
- Bake for 20 minutes, if you are making a cake and 10 minutes if your are baking a sheet.
- It's done when a tooth pick come out clean and the edges are golden and the top a little sticky.
