Soft and chewy or hard and crunchy? Which one is the best cookie? Impossible to say! Everybody has an opinion on what’s best and a great reason why but in our house it’s always the soft and chewy! We love it!!!
Now that you decided it’s time to pick a flavour! And that is every bit as hard! Peanut butter, chocolate, chocolate chips, oatmeal raisins… So many options! I can’t really help you with that but also you don’t have to choose!
My daughter’s favourite is (obviously) chocolate chips!
This classic recipe makes delicious soft and chewy cookies. I usually make a few and freeze the rest of the dough for later! I make little balls of dough and put them in the freezer so I can just put one (or eight) in the oven whenever I want a cookie! I mean, whenever she wants a cookie!
How to make perfect chocolate chips cookies
If you want to achieve the perfect soft and chewy cookie, there are a couple of tricks. The first one is not to use too much flour, the recipe calls for 4 cups but here is the trick, the flour needs to be well aerated, do not pack the flour into the cup!!! Use a knife or your finger to remove excess from the cup but do not pack it! The second trick is to not over bake it! Every oven is different, so mine takes 12 minutes to get perfect soft and chewy chocolate chips cookies but yours might take 10 or 13 minutes! It is really important to keep an eye on your cookies while baking, at least the first time, then you’ll know how long it takes you are good to go every time!

Soft and Chewy Chocolate Chips Cookies
Ingredients
- 1 cup Butter, softened (230g)
- 1 cup Sugar (230g)
- 2 Eggs
- 1 tbsp Vanilla
- 1 pinch Salt
- 3 cups Flour (430g)
- 1 tsp Baking Powder
- 2 cups Chocolate Chips (380g)
Instructions
- Preheat the oven at 350F (180C).
- In the bowl of a stand mixer, mix the butter and sugar until soft.
- Add the eggs, one at the time.
- Add the vanilla and mix.
- Add the flour, baking powder and salt and mix until well combined.
- Add the chocolate chips, hold on to 1/4 cup for decorating.
- Shape little balls of cookie dough and place them onto a baking sheet with a silicone mat.
- Decorate each cookie with a few chocolate chips.
- Bake for 12 minutes. Don't over bake or the cookies won't be soft and chewy!
