Here is the easier, richer, most delicious cake you’ll ever make! Presenting the quatre-quart!
It is a traditional French pound cake. It is so easy to make, all you need is eggs, sugar, flour and butter in equal part, that’s it! Every grand mother in France makes this cake, mine did!!! She always had one or two in the freezer so if we arrived for a last minute weekend she was ready every time!
It’s perfect for your afternoon tea, the little ones snack or the last minute visit! A quatre-quart is so easy to make and it only takes 5 minutes to make (minus the 50 minutes in the oven!) and all you have to do is to weight the eggs WITH their shells and once you have that weight use it to weight the sugar, the flour and the butter.
You can also use flavouring if you want. Add a few drops of pure vanilla extract or a little bit of lemon zest and you will get a complete different cake! If you want to go crazy, you can even add some chocolate chips!
All you have to do is to mix the sugar and the eggs in the bowl of a stand mixer for a few minutes (3 or 4) at high speed until it doubles in volume, then add in the flour, then the melted butter! And that’s it! Pour the mixture into a silicone loaf pan (or a loaf pan with parchment paper with butter). I prefer using silicone molds because I always try to reduce my waste. Also it cuts a little bit on the butter but use whatever you prefer! Then bake until golden brown or until a toothpick inserted in the middle of the quatre-quart comes out clean.
Serve it warm or at room temperature with a drizzle of honey or nothing! Trust me, everybody will it!
Quatre-Quart
Ingredients
- Eggs, weighted with the shells (3 or 4)
- Sugar, the same weight as the eggs
- Flour, the same weight
- Butter, melted, the same weight
- Options: chocolate chips, vanilla, lemon zest, candied fruits, rhum…
Instructions
- Preheat the oven at 350F (180C).
- Use a silicone pound cake mold or a regular mold, buttered and lightly floured, you can put a little piece of parchment paper at the bottom.
- Weight the eggs, WITH the sells.
- In the bowl of a stand mixer, mix the eggs with the sugar at maximum speed, until it doubles in volume and becomes a pale yellow, about 3-4 minutes.
- Stir in the flour.
- Stir in the melted butter.
- If you choose one of the options, now it's time to stir it in!
- Poor in to your mold.Using a wooden spoon, trace a line on top of your batter.
- Bake for around 50 minutes, until a tooth pick come out clean.
