For the longest time I thought I didn’t like Pumpkin Pie! I know, I know! But growing up in France we don’t have a pumpkin season, when everything turns into pumpkin! Pumpkin latte, pumpkin muffins, pumpkin cookies, pumpkin cheesecake… Pumpkin everything! And to be honest I kinda avoided it! But recently I rediscovered this fall dessert and turns out I quite like it! And since I don’t like to buy my dessert I had to perfect my own recipe! So I did and here it is!
Ingredients you’ll need
- Pie shell
- Pumpkin Puree
- Sugar
- Whipping cream
- Corn Starch
- Egg
- Grounded Cinnamon
- Grounded Ginger
- Grounded Cloves
- Grounded Nutmeg
- Salt
How to make a delicious Pumpkin Pie
First, start by making the pie shell. You could buy it but if you want to make it from scratch, here is my recipe.
Blind bake the pie shell. You don’t have too but I find that, with a wet filling such as this pumpkin pie filling, the pie dough get a little soggy if not pre cooked.
In the mean time, make the pumpkin puree. You could buy it but if you want to make the whole pie from scratch, you can find out here how to make homemade pumpkin puree.
In a large bowl, mix the eggs, the pumpkin puree, the spices, the the sugar, the cornstarch and the cream until well combined.
Pour the pumpkin mixture onto the hot pie shell.
You can decorate with little shapes of pie dough such as leaves, pumpkins, flowers… I prefer to bake them separately and place them on top of the cooked pie at the end so it won’t sink inside the pumpkin while cooking.
Bake for 45 to 50 minutes at 350F (180C). The middle should still appear a little under cook.
Allow to cool down on a baking rack.
Enjoy with homemade whipped cream.

- 2 cups (475g) Pumpkin Puree
- 1 cup (200g) Sugar
- 1 1/4 cup (300ml) Whipping cream
- 1 tbsp Corn Starch
- 3 Egg
- 1 1/2 tsp Grounded Cinnamon
- 1/2 tsp Grounded Ginger
- 1/8 tsp Grounded Cloves
- 1/4 tsp Grounded Nutmeg
- 1 pinch Salt
Instructions

- In a large bowl, mix the eggs, the pumpkin puree, the spices, the the sugar, the cornstarch and the cream until well combined.
- Pour the pumpkin mixture onto the hot pie shell.
