When I have a few egg whites left over, usually after I make ice cream, I love to make meringue! And because it’s almost Easter, today I made meringue nests! It’s super easy, it only takes 2 ingredients, egg whites and sugar, and a few minutes to whip up! You can make it any shape you want, you can even make little flowers or add a lollipop stick to make it fun for the kids! You can fill them up with all sort of delicious things! Lemon curd, chocolate, ice cream, whipped cream…
But today, because it’s Easter, I decided to fill my little meringue nests with chocolate ganache, whipped cream and chocolate eggs! My daughter is going to go nuts over them!!!
You can find, over the internet, a lot of different ways to make meringue because there is a lot of different types of meringue. You can make a simple sirup and add it slowly to the egg whites while beating them up but I like to do it the easy way! Cause who has time to make it that way! So I do my lillte meringue nest just by whipping the egg white with the sugar until it’s fluffy and then I just pipe it on a baking sheet and bake it!

Ingredients
Meringue Nests
- 4 (120g) Egg Whites
- 240 g Sugar
Chocolate Ganache
- 50 g Chocolate Chips
- 50 g Whipping Cream
Whipped Cream
- 125 g Whipping Cream
- 25 g Sugar
Decoration
- Little chocolate eggs
Instructions
Meringue Nest
- Preheat the oven to 225F.
- Whisk the egg with half of the sugar at full speed until fluffy.
- Add the rest of the sugar and incorporate gently.
- Pipe into little nest on a baking sheet.
- Bake for 45 minutes.
- Allow to cool down.
Chocolate Ganache
- Warm up the cream in a pan on low heat.
- Pour onto the chocolate chips.
- Let it sit for a minute.
- Stir until all the chips are melted and your ganache is smooth and shiny.
Whipped Cream
- Whisk the cream and sugar at full speed until fluffy.
Making the little nests
- In a little meringue nest, add a spoon of chocolate ganache, then a spoon of whipped cream, then decorate with little chocolate eggs!
