Did you know that you can make cheese at home? Some of them are hard to achieve but some of them are fairly easy! As a French woman living in Canada, I sometimes crave cheese that are hard to find, and because my goal is to make everything myself, I had to try cheese! The first cheese I tried was homemade ricotta because is the easiest cheese you can make at home! Of course, you can easily find ricotta everywhere in the world but there is something really satisfying about making it at home!
It only takes 3 ingredients, it is pretty fast and it is delicious in a lot of sweet and savoury recipes, like pancakes, lasagna, pasta, cakes…
It is also a great way to use “close to expiration date” milk! Cause let’s face it, sometimes you look at your delicious organic grass feed almost full bottle of milk in the fridge and realize you only have a couple of days to finish it! There is no way you can drink all that milk in just 2 days, even if you invite all your children’s friends for a cookies and milk party! And, if you are anything like me, you are not about to through it away, so you have to be creative! Homemade ricotta is a great solution for that!
All you need to do is warm up some milk with a little bit of salt, add some lemon juice and let it sit for a few minutes. Then, put the all thing in a cheese cloth and leave it for a few minutes! And voila! You will get a versatile, fresh, delicious homemade ricotta that is easy to use in your everyday recipes!
Here are the easy steps to create that wonderful homemade cheese at home!
Homemade Ricotta
Ingredients
- 2 L Milk
- 4 tbsp Lemon Juice (or 3 and 1 of apple cider vinegar)
- 1/4 tsp Salt
Instructions
- In a saucepan, warm up the milk and salt over medium heat to 185F (85C).
- Turn off the heat and add the lemon juice.
- Let it sit cover for 15 minutes.
- Scoop the curd into a cheese cloth and let it drain for a few minutes up to 20 minutes, depending on how moist you like your ricotta.
- Place into a container and refrigerate.
