Blueberry Lemon Muffins

In my opinion, muffins works for everything! Breakfast (obviously), snack, tea time, late night snack, dessert and everything else! And that goes for any kind of muffins (like these raspberry white chocolate muffins) but if you add a few fresh berries in it it’s even better! So here is my recipe for the perfect blueberry lemon muffins! And trust me, it is delicious!

Ingredients you’ll need

  • Eggs
  • Sugar
  • Flour
  • Baking powder
  • Milk
  • Vegetable oil
  • Lemon
  • Blueberries
  • Icing Sugar

How to make blueberry lemon muffins

This recipe is pretty simple but trust me it is delicious! So here are the steps to follow to make this muffins!

In a large bowl, mix the flour and baking powder together.

In an other bowl or the bowl of your stand mixer, mix the eggs and sugar until light and fluffy.

Add the milk and oil, then mix.

Pour the flour mixture into the wet mixture and mix.

Add the lemon zest and the lemon juice and mix.

Add the floured blueberries and fold in gently.

Scoop the batter into muffin muffin tins and bake for 20 to 25 minutes depending on the size of the muffins.

Let the blueberry lemon muffins cool down.

In a little bowl, mix icing sugar and lemon juice. Pour on top of the muffins.

And voila! The perfect muffins.

Ingredients
  

  • 3 cups Flour (435g)
  • 3 tbsp Baking Powder
  • 2 Eggs
  • 1 cup Sugar (230g)
  • 1 cup Milk (225mL)
  • 1/2 cup Vegetable Oil (100g)
  • 1 Lemon
  • 2 cups Fresh Blueberries
  • 1/2 cup Icing Sugar
  • 2 tbsp Lemon Juice

Instructions
 

  • Preheat the over at 350F (180C)
  • In a large bowl, mix the flour and baking powder together.
  • In an other bowl or the bowl of your stand mixer, mix the eggs and sugar until light and fluffy.
  • Add the milk and oil, then mix.
  • Pour the flour mixture into the wet mixture and mix.
  • Add the lemon zest and the lemon juice and mix.
  • Add the floured blueberries and fold in gently.
  • Scoop the batter into muffin muffin tins and bake for 20 to 25 minutes depending on the size of the muffins.
  • Let the blueberry lemon muffins cool down.
  • In a little bowl, mix icing sugar and lemon juice. Pour on top of the muffins.
