My daughter and I love to make pies and galette during the summer! We love to go fruit picking during the summer so we always have a lot of fresh organic berries! If you love blueberry pie you are going to love this blueberry galette recipe! Making fruit galette is so much easier and faster than making an actual blueberry pie and it tastes the same! I am sure it will become one of your family’s favourite dessert! Plus it’s a nice way to use fresh blueberries during blueberry season!
Ingredients you’ll need
You’ll need all the same ingredients you would for a blueberry pie:
- one flaky pie crust
- fresh blueberries
- sugar
- corn starch
- lemon juice
- one egg (for egg wash)
How to make a Blueberry Galette
First, prepare the filling.
In a large bowl, mix the washed blueberries with the sugar, the corn starch and the lemon juice. Set aside.
Get the flaky pie crust ready. You can use a store bought pie crust or use my super easy, 3 ingredients flaky pie crust recipe. Totally up to you but one is better than the other!
Roll the ball of pie crust on a floured surface about 1/4 of an inch thick (0.5cm). This doesn’t have to be perfectly round because galettes have a rustic look, so son’t worry about it and let your kids do it!
Pour the blueberry mixture onto the pie crust and fold back the edges to cover some of the blueberries.
Brush the edges of the blueberry galette with egg wash and sprinkle some sugar on top.
Bake for 30 to 40 minutes a 350F.
And voila! Your blueberry galette is ready!
Serve a la mode with a scoop of homemade vanilla ice cream (or homemade strawberry ice cream) or with a bit of homemade whipped cream (or both!). And enjoy!
