This recipe is the simplest cake recipe you’ll ever find! It only calls for 4 ingredients that you probably already have and you can make it in a few minutes! Anytime my daughter wants a cake or wants a last minute princess party I make this cake! Sometimes in the shape of cupcakes, sometimes in the shape of mini cakes. I even use that recipe to make actual cakes and even fancy one like that one!
What you will need
It is a very simple cake made with a genoise and some whipped cream! You can decorate it with fresh berries or fruits or even flowers to make it extra pretty!
As I said the ingredients list is pretty simple:
- eggs
- sugar
- flour
- whipping cream
- fresh fruits or flower for decoration
This genoise recipe is really simple and you can make as much as you want as long as you remember that for each egg you will need 30g of sugar and 30g of flour!
How to make perfect mini cakes
First you will need to prepare the genoise (sponge cake). All you need to do is to beat the eggs with the sugar, with a stand mixer or a hand mixer, until it’s foamy and light. Then, add the flour and fold in gently and slowly.
For those mini cake I bake the batter on a baking sheet then cut little circle of cake. But if you choose, you can bake it in muffin molds to make cupcakes or in a round cake mold to make a cake.
Brush a little bit of homemade vanilla syrup on each little cake.
Add a spoon of whipped cream on one cake then add another cake on top and press gently. Repeat as many time as you want layers. I usually do 3 layers because I think it looks good like that but it is totally up to you!
Decorate with berries and flower and voila!
Mini Cakes
Ingredients
Genoise
- 4 Eggs
- 120 g Sugar
- 120 g Flour
Whipped Cream
- 250 ml Whipping Cream
- 50 g Icing Sugar
Instructions
- Preheat the oven at 350F (180C).
- Butter and flour a baking sheet or use a silicon mat on top of a baking sheet.
- In the bowl of a stand mixer, add sugar and eggs and mix until light and fluffy, about 3-5 minutes.
- Sift the flour and a it all at once to the egg and sugar mixture.
- Gently incorporate the flour until combined.
- Pour the mixture into the sheet and bake for 10 to 12 minutes.
- Allow to cool down.
- Cut little circle of cake.
- Brush a little bit of homemade vanilla syrup on each little cake.
- Add a spoon of whipped cream on one cake then add another cake on top and press gently.
- Repeat as many time as you want layers. And finish with whipped cream.
- Decorate!
