Sometimes the simplest things are best! This jelly roll is so simple yet so delicious! To make a jelly roll all you need to do is make a genoise and fill it up with strawberry jam! If I lost you at “genoise” don’t worry! It’s only a fancy french word for sponge cake! If you think it complicated or hard to master, it is not! Sponge cakes are made with only 3 ingredients. All you need to do is add some eggs and sugar into the bowl of a stand mixer and beat it for a few minutes, until it doubles in volume and becomes light yellow. Then add the sifted flour all at once and gently fold it in until incorporated. Pour that mixture onto a baking sheet with a silicone mat and bake for a few minutes. I told you it was easy!
Now that your cake is ready and cooled you can fill them up with pretty much anything! Jelly, chocolate, whipped cream and fresh fruits… Anything!
Every year, my daughter and I go to a local organic farm for fruit picking! Then we come home and make jam for the year. So we always have jam around! Which makes it really easy to make this jelly roll cake with homemade organic jam whenever we feel like it! Of course, you can use any of your favourite jam or jelly you have at home!
Today, my daughter wanted to bake but I looked around and I had nothing fancy! But I always have eggs, flour, sugar and jam so we went for this jelly rollI! I made mine with homemade strawberry jam. So with only 4 ingredients you can have a delicious dessert! And the best thing is it’s only takes a few minutes! 10 minutes to make and 10 minutes to bake!!!
Jelly Roll
Ingredients
- 4 Eggs
- 120 g Sugar
- 120 g Flour
- Jam, Chocolate, Whipped cream and Fruits
Instructions
- Preheat the oven at 350F (180C).
- Butter and flour a baking sheet.
- In the bowl of a stand mixer, add sugar and eggs and mix until light and fluffy, about 3-5 minutes.
- Sift the flour and a it all at once to the egg and sugar mixture.
- Gently incorporate the flour until combined.
- Pour the mixture into the sheet and bake for 10 minutes.
- allow to cool down. Cut the edges and fill up with whatever you want.
- Roll it down and refrigerate.
- It tastes better the next day or at least after a few hours in the fridge!
