Easter is around the corner! So if you want to take a break from all the chocolate treats you see everywhere right now, try one of those meyer lemon and honey cookies! Kids and adults alike are sure to enjoy them! Don’t get me wrong, chocolate is great and especially for Easter but if you want to try something different, this recipe is for you!
But of course, these delicious cookies can be enjoyed any time of the year! Shape them differently, or not, and make them for any occasions. Or just like that! For no reason at all!
It’s two soft, crumbly and buttery cookie sandwiches are filled with a tangy and sweet honey meyer lemon curd!!!
Keep in mind that you can change the shape of those cookies to fit any season! Try to make those for Christmas shaped as a Christmas tree! Or little hearts for Valentine’s Day or Mothers Day (check out my recipe here)
For Easter, I filled them up with lemon curd made with meyer lemon and honey because I wanted something yellow to make them look like an actual egg. But you can also fill some heart shaped cookies with strawberry jam for Valentines day.
You can make you lemon curd in advance and keep in the fridge for a few days! You can also just use the recipe for the curd, or any left over you might have, on other desserts! It is great with everything! The meyer lemon makes it fancier than regular lemons and the honey gives it a little “je ne sais quoi” that everybody will love!
To sum up, those meyer lemon and honey cookies are simply a delicious treat for the kids and the adults in your life! And you can use this recipe for any holidays or occasion you want!
Meyer Lemon Cookies
Ingredients
Cookies
- 250 g (1 cup + 2 tbsp) Butter, soft
- 125 g (1 cup) Icing Sugar
- 3 Egg yolks
- 440 g (3 1/2 cup) Flour
- 50 g (1/3 cup) Corn Starch
- 1 tbsp Baking Powder
- Zest of 1 lemon
Honey Meyer Lemon Curd
- 2 Eggs
- 2 Egg Yolks
- 215 g (2/3 cup) Honey
- 3 Meyer Lemon
- 90 g Butter
Instructions
Cookies
- In the bowl of the robot, add butter and sugar until it make a paste.
- Add the yolks one at the time.
- In a bowl, mix together, flour, corn starch and baking powder.
- Mix the flour mixture into the butter mixture.
- Make a ball and refrigerate for half an hour.
- Roll into half a cm thick and cut with a cookie cutter.
- Bake for 10-12 minutes at 350F (180C).
- Let cool down completely.
Meyer Lemon Curd
- In a pan, add eggs, egg yolks, honey and lemon juice.
- On medium high heat, stir in the cubes of butter one at the time.
- Stir constantly until all the butter is melted.
- Allow to start boiling then pass through a chinois to remove any cooked eggs.
- Allow to cool down.
Make the cookies
- Sprinkle icing sugar on the top cookies.
- Add a spoon of lemon curd onto the bottom cookies.
- Place the top cookies on top and add a little bit of lemon curd in the holes to make it pretty!
