Growing up in France, strawberry pie was, for me, tarte aux fraises: a shortcrust with a layer of almond cream, filled with pastry cream and topped with fresh strawberries. Once I moved to Canada, i discovered strawberry pie! I never new you could make a pie with baked strawberries and that it would be delicious! But it is! Plus it’s so easy to make it really is a great summer dessert!
Ingredients you’ll need
- 2 flaky pie crusts
- fresh strawberries
- corn starch
- sugar
- lemon juice
- egg (for egg wash)

How to make the perfect Strawberry Pie
- First, you need to make the flaky pie crust. You could buy one, but it’s pretty easy to make and homemade always tastes much better!
- If you want to make your own, you’ll only need flour, butter, a pinch of salt and a tiny bit of water.
- While your crust rest in the fridge, start your strawberry filling.
- Wash and cut your strawberries.
- Place the strawberries in bowl and add sugar, corn starch and lemon juice. Mix together.
- Take your first flaky pie crust out of the fridge and roll it down.
- Put your strawberry filling on the crust.
- Take the second pie crust out of the fridge and roll it down.
- Cover the strawberry filling with the pie crust making sure you leave some holes so the steam can escape. You can also make stripes of dough and cover the strawberries.
- Mix an egg with a tbsp of water and brush this mixture to the crust.
- Sprinkle sugar on it.
- Bake for for 35 to 45 minutes at 375F, until the crust is golden.
- And voila!
- Serve a la mode with a scoop of homemade vanilla ice cream (or homemade strawberry ice cream) or with a bit of homemade whipped cream (or both!).

- 1 cup Sugar
- 1/4 cup Corn Scratch
- 2 tbsp Lemon Juice
