Summer is here and with the sun, the beaches and the summer dresses comes the cherries! I love cherry season and my go to cherry dessert used to be cherry Clafoutis but then I discovered cherry pies! It’s sweet and delicious and perfect for any occasion. But it’s a bit long to make and I usually end up eating the whole thing since my daughter doesn’t like cherries! So now, whenever I feel like cherry pie I make a Cherry Galette! It’s much faster and a little bit smaller so way easier to eat on my own!!!
Ingredients you’ll need
- One flaky pie crust
- Cherries
- Sugar
- Corn Starch
- Lemon Juice
How to make a Cherry Galette
- First, you need to make the flaky pie crust. You could buy one, but it’s pretty easy to make one from scratch and homemade always tastes much better!
- If you want to make your own, you’ll only need flour, butter, a pinch of salt and a tiny bit of water.
- While your crust rest in the fridge, start your homemade cherry filling.
- Wash and pit your cherries.
- Place the pitted cherries in bowl and add sugar, corn starch and lemon juice. Mix together.
- Take your flaky pie crust out of the fridge and roll it down. This doesn’t have to be perfectly round because galettes have a rustic look, so son’t worry about it and let your kids do it!
- Pour your cherry filling on the crust and fold back the edges to cover some of the cherries.
- Mix an egg with a tbsp of water and brush this mixture to the crust.
- Sprinkle sugar on it.
- Bake for for 30 minutes at 375F, until the crust is golden.
- And voila!
- Serve a la mode with a scoop of homemade vanilla ice cream or with a bit of homemade whipped cream (or both!).

- 1/4 cup Sugar
- 1/4 cup Corn Starch
- 1 tbsp Lemon Juice
