Sandwich cookies are awesome! First, you can pick any shape you want for the cookie itself but also for the little whole (if you choose to have one). Secondly, for the flavour, the possibilities are endless!
You could go really simple with jam, any kind of jam, or chocolate spread in a simple sugar cookie! Or if you are felling fancy you could use chocolate chips cookies and fill them up with whipped cream or chocolate ganache or both!
Plus, and this one is my favourite, you can go seasonal! Little heart with raspberry jam filling for Valentines Day. Little Christmas trees for… Christmas! Egg shape and lemon filling for Easter (you can find a really cute recipe here).
Here are a few tricks to make perfect sandwich cookies:
- Cool the dough down in the fridge after you cut your cookies. That will help the cookies keep their shape, which will help your cookies keep their shape and make prettier sandwiches.
- If you are using icing sugar on top, allow the cookies to cool down completely before adding the sugar and make sure to sprinkle the icing sugar before filling them.
- Don’t use to much filling otherwise it will drip.
For this post I am just going to show you how to do a simple vanilla sablé filled with strawberry jam or chocolate spread! But feel free to let me know in the comments section what’s your favourite!
Sandwich Cookies
Ingredients
- 250 g (1cup + 2tbsp) Butter, soft
- 125 g (1cup) Icing Sugar
- 3 Egg Yolks
- 450 g (3 1/2 cup) Flour
- 50 g (1/3 cup) Corn Starch
- 1 tbsp Baking Powder
- 1 tbsp Vanilla Extract
- Jam or Chocolate Spread (filling)
- Icing Sugar
Instructions
- In the bowl of the robot, add butter and sugar until it make a paste.
- Add the yolks one at the time.
- In a bowl, mix together, flour, corn starch and baking powder.
- Mix the flour mixture into the butter mixture.
- Make a ball and refrigerate for half an hour.
- Roll into half a cm thick and cut with a cookie cutter. Half full and half with a hole in it if you choose to.
- Refregirate the cookies for 1h before baking them.
- Bake for 10-12 minutes at 350F (180C).
- Allow the cookies to cool down.
- Sprinkle icing sugar on the cookies you will use for the top (if you want to).
- Add a spoon of jam or chocolate spread on the bottom cookies and put the top on.
