Everybody knows what’s a ganache (I think)! It’s a very basic chocolate recipe that is used in a lot of French desserts like Black Forests, chocolate Macarons, Chocolate tarts… It’s made from chocolate and hot whipping cream and it’s delicious! But there is something even better (if that’s possible!), a Ganache Montée! And what is that, you might ask. Well, it’s basically a whipped ganache. Imagine if a chocolate ganache had a baby with some delicious whipped cream! Want to know more about that french chocolate frosting?
Ingredients you’ll need for your chocolate frosting
You might not believe it but you only need 2 ingredients to make this amazing chocolate frosting. The same ingredients you would use to make a chocolate ganache plus extra cream to whip it! So here is the tiny ingredients list:
- Dark chocolate
- Whipping cream
And that’s it!
Different kinds of chocolate for different kind of ganache montée
You can make whipped ganache with any kind of chocolate. Dark, milk or white. But, even if the ingredients and the steps are the same, the quantity of whipping cream changes.
Dark Chocolate Ganache Montée
- 200g dark chocolate
- 600g whipping cream
Milk Chocolate Ganache Montée
- 200g milk chocolate
- 500g whipping cream
White chocolate Ganache Montée
- 200g white chocolate
- 480g whipping cream
How to make a Ganache Montée
Well, this recipe start exactly like the basic ganache recipe.
In a sauce pan, bring the first part of the whipping cream to a boil.
Place the chocolate in a large bowl, then poor the hot cream on top.
Cover and set aside for a few minutes, until the chocolate melts.
Gently mix the chocolate and cream until completely smooth.
Set aside and allow to cool down completely.
Add the other part of the cream and mix.
Refrigerate for a few hours or over night.
Poor the mixture in the bowl of the stand mixer and mix at medium speed for a few minutes until light and fluffy.
And voila! The ganache montée is ready!
How to use the whipped ganache
Well you could just go ahead and eat it with a spoon! But seriously, you can use it for any chocolate cake or cupcake like you would your regular chocolate buttercream. Instructions
- In a sauce pan, bring half of the whipping cream to a boil.
- Place the chocolate in a large bowl, then poor the hot cream on top. Or you could melt the chocolate first then poor the hot cream on it.
- Cover and set aside for a few minutes, until the chocolate melts. (skip this part if you melted the chocolate first)
- Gently mix the chocolate and cream until completely smooth.
- Set aside and allow to cool down completely.
- Add the other part of the cream and mix.
- Refrigerate for a few hours or over night.
- Poor the mixture in the bowl of the stand mixer and mix at medium speed for a few minutes until light and fluffy.
- And voila! The ganache montée is ready!
