Who doesn’t love chocolate cakes?? I know, I know, there are a few people who don’t but this Chocolate Cake is so rich and so light at the same time I’m sure you’ll love it! I know everybody has their favourite version of chocolate cake but let me try to convince you that mine is better! This dessert is made with layers of moist rich chocolate cake, covered with a light and fluffy whipped ganache and that’s it. Do I have your attention now? Ok! So here it is!

- Sugar
- Cocoa powder
- Baking powder
- Salt
- Eggs
- Milk
- Warm water
- Apple cider vinegar
- Vegetable oil
- Butter
- Vanilla extract
How to make the best Chocolate Cake
Make the Ganache Montée
Ganache montée is a fancy french way to say whipped ganache and you can find my recipe here.
Make a regular ganache with dark chocolate and whipping cream. Allow to cool down completely.
Add some cold whipping cream and whip until light and fluffy.
Refrigerate until you are ready to frost you cake (few hours).
Bake the chocolate cake
Preheat the oven at 350F (180C).
In a small bowl mix the milk and apple cider vinegar. Set aside for a few minutes.
In a large bowl (or the bowl of you stand mixer), stir the flour, sugar, cocoa powder, baking powder and salt.
Add the eggs, milk and apple cider vinegar, oil, melted butter.
Stir until well incorporated.
Poor the batter into a 3 silicone cake pan or a buttered regular cake pans. Around 3 cups for each pan. If you only have one just bake one after the other.
Bake for 35 minutes. Until a toothpick comes out clean.
Let your cake cool down completely on a grid.
Cut the top of the cakes to make them flat. Eat the top of the chocolate cakes because it’s delicious and you deserve it after all that hard work!
Make the chocolate cake
Place the first cake on a decorating turn table.
Brush some vanilla syrup on it.
Scoop some ganache montée on the cake an spread all around.
Repeat with the two other cakes.
Using a spatula, spread the rest of the chocolate frosting on top and all around.
I chose a naked look for this cake so I scraped the ganache montée around the cake to allow some actual cake to show a little.
Using a piping bag, make little rosette of ganache on top of the cake.
And voila! The best chocolate cake ever is ready!
