Growing up in France, blueberry pie was not a thing! But since I moved to Canada, I discovered a new world of pastry! Apple pie, blueberry pie, strawberry pie, cherry pie… And it is delicious! Here is my recipe for blueberry pie! It’s actually super easy and it works for every occasion: Christmas, Thanksgiving, a random Sunday afternoon…
Ingredients you’ll need
- two flaky pie crust
- fresh blueberries
- sugar
- corn starch
- lemon juice
- one egg for egg wash
How to make Blueberry Pie from scratch
Well, this is a classic so everybody has a recipe and the internet is full of different options. But if you are looking for an easy to make recipe that comes together in minutes (not counting the baking time), this recipe is for you!
First, prepare the filling.
In a large bowl, mix the washed blueberries with the sugar, the corn starch and the lemon juice. Set aside.
Then, get the flaky pie crust ready. You can use a store bought pie crust or use my super easy, 3 ingredients flaky pie crust recipe. Totally up to you!
Roll the first ball of pie crust on a floured surface about 1/4 of an inch thick (0.5cm) and a little bit larger than the size of your pie pan. Place the crust in the pie pan and press the edges. Cut the edges.
Pour the blueberry mixture onto the pie crust and spread all around.
Roll down your other ball of pie crust.
Now, for the top of your homemade pie there are a lot of different options. But decorating is the fun part! You could just place the pie crust on top of the blueberry filling and make some holes to allow the steam to escape. Or you could cut some stripes of dough and place it on top of the pie. Or, and that is what we did here, you could use a cookie cutter and cut some shape of dough and place it on top of the homemade pie filling. My daughter chose to use hearts so we cut different sizes little hearts in the dough and she placed it on top of the blueberry filling. The key is to use a lot of dough to cover most of the blueberries, again, leaving some holes for the steam.
Brush the top of the blueberry pie with egg wash and sprinkle some sugar on top.
Bake for 40 to 45 minutes.
Serve warm or cold. With or without homemade whipped cream. Or with a scoop of vanilla ice cream on top!

- 2 Flaky Pie Crust
- 5 cups Fresh Blueberries
- 1/2 cup Sugar
- 1/4 cup Corn Starch
- 2 tbsp Lemon Juice
- 1 Egg

- Set aside.
- Preheat the oven 350F (180C).
- Roll the first ball of pie crust on a floured surface about 1/4 of an inch thick (0.5cm) and a little bit larger than the size of your pie pan.
- Place the crust in the pie pan and press the edges. Cut the edges.
- Pour the blueberry mixture onto the pie crust and spread all around.
- Roll down your other ball of pie crust.
- Using a cookie cutter, cut little pieces of dough.
- Place those pieces on top of the blueberry filling covering most of the pie but leaving some holes for the steam to escape.
- Brush the top of the blueberry pie with egg wash and sprinkle some sugar on top.
- Bake for 40 to 45 minutes.
