Here is my story about vegan apple pancakes! Pancakes are my daughter favourite breakfast! And who can blame her?! They are delicious!!! But after having to make it everyday for month I (not her) started to get bored, so I started to add stuff in it! First the usual, berries, chocolate chips… My version of pancakes was already pretty healthy, with organic flour, organic almond flour, organic eggs and organic almond milk. But then I decided to try making them vegan! I figured that would be even better! So I tried and tried until I finally did it! I found the perfect recipe for delicious fluffy vegan pancakes! Then I added little pieces of apple in them but you can add anything you want!
Vegan cooking can be intimidating and vegan baking even more! But vegan apple pancakes are pretty easy to make! I make my everyday pancakes with a almond milk so no big difference here for me! But I was worried that the vegan pancakes will end up being flat but adding organic apple cider vinegar makes them light and fluffy! The magic happens when you mix your almond milk with the apple cider vinegar and let it sit for a few minutes! Then when you add the milk and vinegar to the flour mixture. The reaction between the vinegar and the baking soda will give your batter all the bubbles you need to get perfect pancakes!
I use apple in that recipe but you can do them plain or add other fruits. I like to use blueberries or raspberries or even mash a banana into the batter! You can also go for chocolate chips to please the chocolate lovers in your life!
Cook them like you would any other pancake but instead of butter in your pan just add a bit of coconut oil and voila!
Vegan Pancakes
Ingredients
- 1 cup Almond milk ( 240mL)
- 1 1/2 tbsp Baking powder
- 2 tbsp Sugar
- 1 pinch Salt
- 1 cup Flour (130g)
- 2 tbsp Coconut oil
- 1 tbsp Apple cider vinegar
- 2 Apples, peeled and diced
Instructions
- Whisk almond milk and apple cider vinegar together. Let it sit for 5 to 10 minutes.
- In a large bowl, stir flour, baking powder, salt and sugar. Add milk mixture. Whisk until just combined.
- Heat a large non-stick pan over medium heat. Add a little bit of coconut oil and a few dice of apple. Ladle batter on the apples, making pancakes of any size you like. Adjust heat if necessary. Flip pancakes after bubbles rise to surface and bottoms brown, after 2 to 4 minutes. Cook until second side is lightly browned. Add a little bit of coconut oil between each pancakes and repeat. Serve warm, or hold on an ovenproof plate in a 200-degree oven for up to 15 minutes.
