Nothing says summer like a peach pie! This is one of everybody’s favourite dessert around the summer! But in order to make a delicious peach pie you need a lot of peaches and it’s a big dessert! if you are looking for all the flavours of this great summer dessert but don’t want to make a full pie, try my peach galette! It tastes exactly like a peach pie but it’s smaller and faster to make! And you can do that with all kind of fruits! Strawberry galette, cherry galette, blueberry galette…
Ingredients you’ll need
Like I said, it is pretty much the same ingredients that you need to make a peach pie, but a little less of everything!
- one flaky pie crust
- 5 peaches
- sugar
- corn starch
- vanilla and cinnamon (optional)
How to make a Peach Galette
Well, since a peach galette is basically a smaller version of the pie, the steps are pretty much the same.
First you’ll need to get your homemade peach filling ready!
In a large bowl, mix the peeled and sliced peach with sugar, corn starch and vanilla extract or cinnamon if you choose to use it. Then set aside.
Then get the flaky pie crust ready. You can use a store bought one but it tastes much better with a homemade pie crust. But don’t worry, my recipe for a flaky pie crust is super easy to make and you’ll only need flour, butter, water and a pinch of salt.
Roll the dough. This doesn’t have to be perfect! We are going for a rustic look so no need to make the pie crust round and pretty.
Pour the peach pie filling in the middle of the dough. And fold the edges of the dough back on the filling.
Brush the egg wash on the edges of the crust then sprinkle some sugar on it.
Bake for 30 minutes at 350F (180C) until the fruits are cooked through and the crust is golden.
Enjoy warm or cold, with homemade whipped cream or homemade vanilla ice cream.
